Carrots were never a favourite of mine growing up. It was always the last thing on my plate and I remember many a temper tantrum thrown because I didn’t want to eat them. Now I absolutely love them – interesting how our tastes change as we grow.

The summer and fall are the best times to eat locally grown carrots. They are their most fresh and full of flavour.

Health Benefits:

  • Excellent source of antioxidants which help protect against cancer and cardiovascular disease.
  • The old favourite – good for vision thanks to the beta-carotene in carrots.
  • Carrots are high in carotenoids which helps protect against heart disease, many cancers and regulating blood sugar.
  • They also protect the health of your lungs due to the rich vitamin A content (excellent for smokers).

Summer is a great time to eat raw and cooling salads. Why not try grating some carrot on top of your salad to add a great colour and taste.
