Trying Out New Recipes…

This week we have been trying new recipes.  We did a huge shop in Wholefoods on Sunday, cost us a small fortune so thank goodness we don’t shop there together every week!  It’s when we go shopping together we seem to spend a fortune.  Wholefoods has such amazing food we just get carried away.

For dinner on Monday night I made some pan seared scallops with a cayenne pepper crust.  I literally seared them for a couple of minutes on each side until they turned a light brown colour.  Before I put them in the pan I put them in some milk, dusted them with some flour and sprinkled some cayenne pepper.  To go with the scallops I made some crunchy kale and mashed potato.  Delicious!!

On Tuesday night it was Robbie’s turn to make dinner using the Tilapia fish we’d picked up on sale in Wholefoods.  He baked the fish in the oven with some garlic, lemon, olive oil, onions, red pepper and herbs and served it with some quinoa and spinach salad!  Another fabulous meal.


My camera battery died just as we were taking the photo so this was taken with Robbie’s iPhone.

Last night I made a tomato, sausage and spaghetti dish.  I don’t like sausage so this was made just for Rob and I had a black bean burger! Yum!!

What are your winter foods?

Today was just a typical Thursday at work.  With the cooler weather I was craving something warm for lunch.  I opted for an old favourite….

Baked tofu with steamed vegetables and brown rice… also known as ‘The Victory Plate’!  I know to some this probably looks really boring but I LOVE it!  I can’t wait to get back into eating more brown rice as the days get even colder.  I don’t eat enough of it during the summer.  I’m also looking forward to eating more of my bean chili!! YUM!

This evening I cooked my go-to meal for one! Bean burgers!

I put the bean burger under the broiler for a few minutes with some brie and spinach on top!!  Melty gooey mess all squished inside a whole wheat muffin with some BBQ sauce!

I may or may not have had a bite of a Mars Bar for dessert! 😉

It’s nearly the weekend!!  That deserves a WOO HOO!

Belly Full Of…

…bean burger and bread!

It’s not very often that I eat white bread but tonight I did.  I stopped in the shops on my walk home from work to pick up some cat food and couldn’t resist buying a bread roll to put my bean burger in.

I used the usual mix for the bean burger

..but this time with corn off the cob, avocado, irish cheddar and a white roll.

Part of me knew I would regret eating the white roll but I didn’t care at the time.  I’m now feeling really bloated!! urgh!  My mind took over my body with this decision.  Oh well!  C’est la vie!

Robbie is playing football tonight so I’m home alone watching whatever rubbish on TV I can find!

Round 2!

I am so excited!  Yesterday we booked our trip away for our anniversary next weekend…. you’ll have to wait and see where we are going.  I cannot wait to get out of the hot, sticky city!

This evening I decided to attempt the bean burgers again but this time with NO chili powder!

I’m not going to give you guys the recipe until I publish my article tomorrow…. so watch out for that.  The end result was D.E.L.I.C.I.O.U.S!

I love all the green on my plate!  I steamed some broccoli to go with my burger.

I added a little coleslaw and ketchup to eat with it. mmmmmmmmmmmm!

The only mistake I made this time was using the same knife to cut up my broccoli as I did to cut up the jalapeno in the burger… resulting in spicy broccoli!  I quite liked it. 🙂

For dessert I had a tiny square of Cadburys dairy milk.

It’s getting late and I’m tired after a long day at work.
